Sunny Morning Baking (choc blueberry mud muffins)

Sunny Morning BakingThe Homelea kitchen is a wonderful place to be on a sunny morning.  The sun streams in through the window spreading it’s cheery goodness.  You can see the green paddocks out through the window and  the occasional cow or horse strolls by.  Ned is generally sitting just outside as well, and he always provides a tail wag when you call out to him.

The other morning I was washing up and it was so nice being in the kitchen that I decided to stay a little longer and bake something.

I’ve become a bit of a fan of the Well & Good bread and cake mixes because they taste really good, and are dairy and gluten free.  Before we go any further I just want to say that this post isn’t sponsored in any way, I just really like the Well & Good products!  I’m working my way through their range, so there’s a couple of different Well & Good boxes in the pantry at present.

I opted for the Chocolate Mud Cake mix from the pantry shelf, with the intention of making the muffin option that was on the back of the box.

I’ve got to say that the muffins were good.  They were also incredibly easy to make.  I added in some frozen blueberries, but I think some peanut butter added into the mix would be delish, or adding in some bits and pieces to make rocky road muffins would work well too.

Yum!
